Dad’s Veggie Lasagna This is one of my favorite recipes of all time!! I can’t take credit for this one: it’s my dad’s recipe, one of the first main dishes I ever learned how to make, is easy and vegetarian, and is also the first dish I ever made for my husband!  However, I did make a knock-out vegan version here that I also highly recommend :)
