Vegan frittata, creamy tomato soup, and stew with cornmeal dumplings recipes!

Hello everyone! I hope you have all been able to stay well despite the massive amounts of germs going around!! Over the past few days I haven’t done much of anything exciting, but I do have a couple good recipes to share with you.

I made a vegan frittata that was pretty fab!!

First, I threw into the bottom of a casserole dish:

* Chopped tomatoes

* Spinach

* “Sausage flavored” seitan that I had marinated in a mixture of water, EVOO, soy sauce, maple syrup, liquid smoke, garlic, champagne vinegar, and tomato pastePicture 414

Then, I made the following “egg” mixture from:

* 2 packages tofu (any firmness works fine)

* 1/2 c. unsweetened almond milk (or other non-dairy milk)

*1 c. chickpea/fava bean flour

* 4 T. nutritional yeast

* salt (black sea salt, if you have it), and pepper to taste

This frittata recipe is adapted from the omelette recipe in  this cookbook.    Picture 419

I poured the mixture over the veggies and “sausage”, but the next time I make it I will just mix the veggies into the egg mixture (I prefer the veggies mixed in throughout, instead of on a layer on the bottom).  Bake at 350 degrees for about 25 minutes.  Then, turn off the oven and let the dish sit in the oven with the door closed for another 10 minutes until the top browns.

Yum!!! This is the BEST workday morning recipe – make a batch on Sunday, and reheat from quick but delicious weekday breakfasts!

I’ve also been having a lot of plain bowls of broth…. sooooo exciting eh?!?

Lots of snacky foods (not cuz I’m lazy but because I’ve been too tired to make things in the kitchen!) I love, love, love these chips and I cried a bit when I finished the bag!

Veggie Pirate’s Booty which was sent as a sample…. this stuff is awesome!! I love the portion-controlled bags… it is a decent-sized, medium bag yet it was just over 100 calories and had a ton of flavor.

Yesterday the only thing I ingested (aside from 3 bowls of soup and massive amounts of medicine and tea) was this Element bar, which was another sample.Picture 423

Homemade creamy tomato soup…. so good!!!!

* 5 large roma tomatoes, loosely chopped

* Saute over medium heat, and blend with an immersion blender

* Turn to simmer, and stir in 1 1/2 c. coconut milk, basil, salt, garlic, and pepperPicture 428

You know what… it was alright, but I prefer my own homemade “cheese” sauce so much better!

I mixed in some chopped spinach for color, and for the extra health kick – I need all the vitamins I can get right now!! I also ended up stirring in some jarred tomato sauce to improve the flavor.

And I’ve had about 14 bowls of this uber-warming, super easy, veggie stew with cornmeal dumplings!!

* Simmer chopped carrots, red potatoes, celery, and corn on the cob in a pot of veggie broth for as many hours as you have – it’s that easy ;)   I also stirred in some tomato paste, EVOO, salt, pepper, garlic, basil, oregano, and a bay leaf

* After the stew is ready to serve (veggies are tender), make cornmeal dumplings by blending 1 package firm tofu, 1 c. cornmeal, 1/2 tsp. baking powder, and salt and pepper to taste

* A heaping spoonful at a time, drop dumpling batter into the stew which should be on medium hot heat.  Cook for about 10 minutes, or until the dumplings are cooked through.

Picture 433I have had this soup for breakfast, lunch, and dinner! Unfortunately it has not cured my respiratory infection yet, but it does taste soooo comforting and soothes my sore throat like nobody’s business!

    Aw, hope you can kick those germs soon! Love your eats, especially the tomato soup!

    Good ole chicken soup does wonders for me – I like to use thick egg noodles that soak up the broth.
